Boerenkool met Worst

Tap step to focusPeel the potatoes and cut them into chunks. Place them in a large pot.
Add the chopped boerenkool (kale) on top of the potatoes. Pour in enough water to just cover the potatoes. Add a pinch of salt.
Bring to a boil, then lower the heat, cover, and let it simmer for about 20-25 minutes, or until the potatoes are very tender.
About 15 minutes before the potatoes are done, place the smoked sausage on top of the kale to heat through.
Once everything is cooked, remove the sausage and set it aside. Drain the water from the pot (you can save a little of this cooking liquid).
Mash the potatoes and kale together using a potato masher. Add the milk and butter, and mash until it reaches a creamy consistency. If it’s too dry, use a splash of the reserved cooking liquid.
Season generously with salt, pepper, and freshly grated nutmeg to your taste.
Slice the smoked sausage and serve it on top of the stamppot. Don’t forget the mustard!
