Method

Toss the apple wedges with a splash of olive oil until lightly coated.
Heat a grill pan over medium-high heat and grill the apple wedges until they have distinct grill marks on both sides.
Combine the grilled apples, finely diced red onion, roughly chopped baby spinach, roughly chopped butter lettuce, aged cheese cubes, walnuts, and croutons in a large salad bowl. Pour the dressing over the top, toss gently to combine, and serve.
