Method
Tap step to focusSlice the garlic into thin slices (1mm thick).
Bring a pan of water to a boil for the gnocchi.
Heat a frying pan over medium-high heat with olive oil.
Cut open sausages, crumble the meat into the pan in bite-sized chunks.
Brown the sausage chunks on both sides, then lower the heat.
Add garlic slices and chili flakes; sweat for 1-2 minutes.
Salt the boiling water and cook gnocchi (3-4 minutes).
Add frozen peas to the frying pan and increase heat to medium-high.
Drain gnocchi, keeping 1 glass of cooking water.
Add gnocchi, cooking water, and 2/3 of the Parmesan to the frying pan.
Stir until the water, cheese, and fat form a glistening coat.
Serve garnished with remaining Parmesan and black pepper.
