Method
Tap step to focusPreheat the oven to 200C (conventional oven).
Dice sweet potato and carrot into half-circles (approx. 0.5cm thick) and place on a baking tray.
Add olive oil, salt, and pepper; bake for 20-25 minutes.
Add asparagus tips and bake for another 10 minutes.
Finely dice the red onion, extract lemon juice, and crumble the feta.
In a bowl, mix the roasted vegetables, lamb’s lettuce, onion, and feta.
Whisk lemon juice with 2 tablespoons of olive oil.
Add dressing to the salad and mix thoroughly.
Garnish with walnuts.
